It's Fresh Spring Greens!
Have you noticed what's new in the produce department these days? Spring is the time for fresh spring greens! Although spinach and dandelion are more associated with spring, I found some fresh mustard greens. You can use this same recipe for dandelion greens. Both are considered bitter greens which are an important flavor for spring.
Bitter is the Taste of Spring
It is the bitter flavor that we are lacking in our diet. This bitter flavor is especially healing for the liver and is associated with spring. If you are unaccustomed to the taste, try eating very small amounts of bitter greens with meals.
Quick Recipe: Sautéed Mustard or Dandelion Greens

Quick Recipe: Sautéed Mustard or Dandelion Greens
Prepare your greens by removing the thick end of the center rib. Then coarsely chop the greens. Sauté a clove of minced garlic in a small amount of coconut or olive oil. Add the chopped greens to your pan and gently stir until they wilt. With heat on low, cover pan for a couple minutes to steam through. |
I dust with black pepper and squeeze fresh lemon juice over the greens before serving.
