I have had a really busy couple of weeks and have found myself short on time to cook. Especially at dinner when I need to get out to a meeting and I have let the time get away from me. I am sure you can relate! At those times I do my best to include something nourishing in my rapid creation. I put together a one pot dish, that I want to share with you, that is fast and delicious. This is also a great idea to eat on vacation, when you are staying in place with a kitchen and don't want to eat out all the time.
Step 1: Cook Chicken or Turkey Breast in Skillet
Slice boneless, skinless chicken or turkey breast about 1/8 inch thick. Lightly season with black pepper and seasalt. Over medium-high heat, lightly brown meat in butter or olive oil. (Vegetarians could substitute tofu for the meat and add it to the dish later.)
Step 2: Add a Seasoned Side
To the skillet I add a frozen seasoned side dish with a touch of water, lower the heat and put the lid on the skillet until mostly done, stirring occasionally. Refer to directions on the package.
Choosing your seasoned side is the tricky part. Find a prepared side dish that is made with healthy ingredients. I steer clear of MSG, disodium guanylate (which is worse than MSG), yeast extract--you get the picture. I aim to eat real food. And you will have to hunt a bit to find prepared foods that meet those qualifications.

Step 3: Add a Quick Cooking Green
By now your seasoned side dish has been simmering. A few minutes prior to it being complete, add your quick cooking green and cover the pan again for a minute or so until the greens wilt. Stir them in and allow to simmer for another minute. I suggest using either spinach or swiss chard as your green. Baby spinach or even frozen spinach will work. If using frozen spinach, add it in at the same time as your frozen side. Swiss chard takes about 4 minutes or so to cook. The baby spinach only needs a couple minutes at the end to wilt.
And voila, there you have it--the perfect quick meal! Serve it with a green salad. It appears fancy enough to look like you have been cooking for hours!
